Hi! I hope you see this message despite the video being a bit old. I’ve been having trouble recreating this recipe. While the flavor is spot on, I’m struggling with the texture. I followed your tips to check if the dough was kneaded long enough in the food processor, and even processed it an extra 15-30 seconds for each portion of dough before recombining. However, the final product still comes out soft and a bit gummy. Do you have any suggestions on what I could do differently? I’d really appreciate your help. Thank you!

what can u use this in? im looking to add to stir fries and salads.
So I had a bit of trouble. My food processor is 2000 watt so I used it for half the time but I think the gluten broke down. Also my protein powder has more than just pea so that may be the trouble as well. I couldn't make it into a sausage or knot it. I've plaited it but it just merged into one lump. It's cooking now in the instant pot but I don't think there will be shreds. What would you suggest with a 2000 watt processor? Thank you Update.. with my 2nd attempt I replaced the protein powder with chickpea flour and potato flakes and it worked! I also processed half the batch for 1 minute each in the 2000 watt processor. Pressure cooked Cauliflower with salt, olive oil, balsamic modena vinegar.
My go to would be a buffalo glaze! It's worth mentioning that 1tbsp of oil is over half of the calories of the entire head of cauliflower 😮
@@GreenEdgeHealth we have to die for something... You can't only live with vegetable and fruit... It's a good things eating vegetable but you have to integrate in your routine a lot of type of food, meat, fish, vegetable, cereal, fruit, milk even bit of sugar, that is HEALTHY... you aren't eating healthy, you are eating things based only by their calories concentration so you can evereating. Vegetable are full of water, that's why are low caloric... But you will digest it so fast that after 3/4 hour you must fell hungry as fuck. Try some good olive oil, it isn't so bad for you and add that flavour to your sad salad.
@@ErDenol_00 Sad salad because there's no olive oil? That feels restrictive to me. A spicy lemon avocado dressing or an olive tapenade massaged into the leaves gives the same satiation of fat but with far more nutrition per calorie. We all have choices, and the choice I recommend is maximum nutrition per calorie. Food rich in vits, minerals, antioxidants, pre-biotics, fibre. If you're telling me that is unhealthy then I think the conversation is over. Also, being hungry 4 hours after your last meal is normal. Ideally you should eat within an 8-12 hour window so three meals easily works out.
@@ErDenol_00 I also think you're misinterpreting the video. I'm not saying only eat cauliflower. Eat a wide range of wholegrains, pulses, legumes, veg, fruit, nuts, seeds!
@@GreenEdgeHealth i don't said vegetable is unhealthy, I said eating ONLY vegetable and fruit is unhealthy... You can have all the vitamins and probiotic you want but the best diet is various and not processed food and my Italian premium olive oil is for sure healthier that your supermarket cauliflower.
Cauliflower is grim mate could be worth a billion i still wouldn’t eat it
The interesting thing about taste preference is that it's entirely changeable for anyone (apart from the genetic stuff like coriander). There was a time when I "hated" literally all veg. But the point of the video stands with any veg pretty much.

@@kingslime6610Hah, I see! I love mixing cauliflower in a spicy soy sauce mix before roasting. Or coating in a buffalo sauce and roasting.

@@kingslime6610Not if you make your own! I'm going to put together a string of videos showing how to make a lot of popular sauces without oil/butter etc. Studies have also shown that the fermentation in thing slike soy sauce/miso paste negates a lot of the effects of the sodium too. I wouldn't go crazy with it, but it's not unhealthy :)

Is the food processor better to use than a stand mixer with a dough hook?
Yes, it will take a good 30+ minutes to get the same results with a dough hook - and the stand mixer gets very hot!

How about Friday's Food News? Keep it short & catchy. The excessive amount if various salts aka sodium they're putting in our food along with a bunch of other worthless garage! Thinking this is why I got acute heart failure & only used salt in baking because it was necessary- found out on my own after over a year of a nibble of bread or baked goods! Yes, you can make anything including breads with salt! Well, not a salted bagel but you know what I mean! 😊
Do you want to quit junk food and eat healthier but you keep getting pulled back?
If you allow a tip, you can add a bit of vit-c powder. This helps heep the beets color, reduzing oxidation and bring more color after finish in the oven.
I do this but totally forgot to add it whilst recording!! I was very upset - but you can see in my vegan bacon video that I use it. It is the perfect antioxidant for preserving colour isn't it!
@@GreenEdgeHealth I wonder if is possible to avoid the "tight knot snake technic", an still get the shredded fiber texture, by creating a tight container to keep the seitan dough hold tight. Like create the long "snake" but cut it in 9 equal pieces and aligh it in the same direction inside the container. A container with adjustd to hold very tight the aligned pieces of seitan I presume Vivera's Steak use a technic like yours, processing to render fibers, but managed a way to cook the seitan with the fibers aligned in the same direction. By the way, did you know scientists found a way yo turn low moisture TVP into something closer to high moisture extruded vegan meat? It would nearly eliminate the typical spongy & tough sensation of cheap TVP chunks.

Someone need to add artficial inteligence to the automatic subtitle algorithm, to allow it recognize that in cooking videos it must use the word "seitan" and not "satan" for the captions. "Satan" and "seitan" shave the same pronounce.

Luckily, I wasn't really big on junk food but now with my strict salt diet, vegetarian and dislike mushrooms, sometimes when on the road or out with family &/or friends, etc I'm stuck with a very limited selection or even there's nothing at all! This last long distance trip I took one of your seitan recipes and sliced it up and ate that, boiled egg and Buc-ees dark chocolate almonds & M&Ms. And other than being mentally exhausted from driving I turned around quicker than the past!!

Free coaching?! I had to train myself to feel thirst years ago, and literally only noticed this year that i do, in fact, get hangry and irritation is one of my signs of hunger. And that's on poor interoception 🥴
That "hangry" sensation is a perfect example of how greatly diet affects your every day life! Whether you have goals to achieve or a busy week etc, this is how you can make life so much easier for yourself by planning your food (your fuel) ahead of time so you can THRIVE rather than just survive. Have you ever used the same mixing, stretching, cooking method with seitan made from flour?
Ii find you don't need to as much with washed flour. However, if you're mixing in other fresh foods such as tofu or beetroot then definitely follow the same approach.
I've just made a batch of this i didn't have pea protein so ground some tvp to powder and used that instead its steaming now
How did it turn out?
