Last way to break brakes in is that way, slow pressure careful not to get them hot and glaze the pads. Just use them normal and light until seated and bedded in.

Got the 5 Star as well with 17" frame and love it. At 5' 9 and 195, I've been able to get to 36 o 37 throttle only and 40 adding leg power. I'm surprised you got 34 only.

you can turn your handle bars around 180 and accomplish the same thing, I did that to mine and my wife's much more comfortable to ride.

I think that at 250lbs, that motor is too small for someone my size; other than that it looks really nice and intriguing.

shuttering happens to my ebike as well front wheel. Lift tire and run to see if off balance. Not much weight in front so you'll notice it more than rear. UA-cam videos will explain how to fix.

Maybe adjust your camera? Mostly looking at your phone and handlebars for the whole video.

How's your rear shocks working ,mine are way too stiff. Im230lb. And they don't compress at all
