INGREDIENTS
In a bowl add all your dry ingredients.
450 grams all purpose flower
6 gram corn starch
3 gram baking soda
2 gram salt
Mix dry ingredients
In separate bowl
100 gram brown sugar
300 gram white cane sugar
1 whole egg
Add 1 egg YOLK
230 gram salted melted butter
Mix well.
Add half of 1st bowl into 2nd bowl.
Mix well.
Add last half of 1st bowl into 2nd bowl.
Mix (use spatula and fold until no white powder)
Add chocolate of choice.
Mix
Put bowl in fridge for 1-2 hours
place parchament paper on flat sheet.
roll balls of cookie dough ( I do 80 grams per ball)
place ball on sheet and press down a bit
Bake for 20 minutes in a preheated 340 degree oven. Cool for 10 minutes.
