Caramelized Onion Jam
Recipe:
2lbs red onion
3 table spoons olive oil
2 tea spoons salt
1/2 tsp crushed pepper
3/4 cup sugar
3/4 cup vinegar
1 tbsp herbs (rosemary, thyme, basil do well)
Slice the onion lengthwise. Add oil to a heavy bottom pan and add all the onion to it. Cook covered on medium high heat until the onion gets translucent. Then add salt, pepper, sugar and vinegar. Once you add these, turn the heat down and cook further on low heat until it turns dark and thick and the onions appear caramelized. The entire process can take about 15-20 minutes.
The jam is a good addition to cheese platters, with crackers as an addition to grilled cheese, hamburgers or whipped with cream cheese for a caramelized onion dip!

A quick demonstration on how to electro-etch metal using common salt. I electro-etched stainless steel. Be careful and do your own research when trying it out on different metals. It involves redox reaction and you'd want to know what byproducts are created. With stainless steel, the byproduct was rust and chlorine gas in very small quantities so i was not hurt.
