Book review of The Man in the Iron Mask
Most of us have seen the Hollywood version of The Man in the Iron Mask. However, the truly masterful original book by Alexander Dumas written in the 1850s I believe is stunning. You will come face to face with the four musketeers. The characters are both widely drawn with broad brush strokes and also finely articulated. This author was truly a master of his craft. I was actually happy to find out he's melanated as these celebrated stories went even higher in my estimation. I laughed and I cried and wanted it to both go on forever and return to the beginning before I knew that even fast friends must part. I suspect that I will long be wondering about the final words of the penultimate musketeer to leave the earth.

Cheese and vegan don’t really mix
Are you plant-based? If not, don’t bother to read this post or probably follow my channel because it is not for you. But if you are really interested and not trolling, on my channel you can just put plant-based before everything you read. I am a vegetarian now, not vegan, but this particular recipe is vegan. It doesn’t contain any dairy. If you’ve never used nutritional yeast, you probably wouldn’t know that it imparts a cheesy taste. I didn’t have vegan cheese or any cheese actually so I’m in the school of I need to eat and substitution is the way I get there.

You don't need oatmilk in frijoles. You can actually make refried beans vegan simply by using corn oil. Boil pinto beans and salt to taste. Then once soft take some corn oil in a skillet and warm it. Add your beans and mash carefully(so as not to get oil all over yourself.) For the rice, that also can be made vegan. Wash rice and allow to dry while you're getting the other ingredients ready. Chop tomato, onion and mince garlic, water (if making one cup of rice have 2 cups water ready but you can also use veggie broth for added flavor) and be ready to add when time. Take rice and add corn oil just until it coats the rice(my mom used to use more and would drain it but i convinced her just to add enough to coat the rice.) Stir rice as it cooks to make sure it doesn't burn and once golden add veggies. Saute to release the flavors then add your broth/water. Stir once turn down to heat to simmer and cover. In about 15 min check rice for doneness. If not ready by then give it a few more min and it should be ready.

I was paid to do food writing while I lived in Australia for 12 years, and I have been cooking for about 30 years. One of the many things I learned during that time is there are sooooo many ways to cook the same things and a lot of it is due to personal preference. I like a more rich, creamy texture so I add oat milk and sometimes sour cream and cheese. It depends on what I’m feeling like at that particular moment.
