That's dynamic subdivision, if you press only 'D' of any mesh without any subdivision, that mesh will show as smooth surface, and shift +D to turn off the dynamic subdivison.

non symmetrical, operation cancelled were shown many times. So i guess, thats where i went wrong

When you get that non symmetrical error, try mirror and weld, it will do same topology both side, then you can work with symmetry
