Berry Compote
2 cups mixed frozen berries
1/2 cup granulated sugar
juice of 1/2 lemon
Vanilla Custard
350ml milk
4 egg yolks
50g corn flour / cornstarch
100g granulated sugar
1 tbsp vanilla powder
Brioche Dough
275g all purpose flour
5g instant yeast
25g granulated sugar
2 eggs
50ml milk
80g unsalted butter, cubed and softened
Streusel Topping
65g white sugar
80g plain flour
45g unsalted melted butter
