Why don’t my blue print details match my building?

What is the appropriate term used when you do things opposite of the plans like the wooden doors , and do you need a plan revision approved from the city ?

I'm about 1 year and a half into carpentry and I really want to get to the point to where I can understand and read blueprints...What do you recommend? How can I elevate?
