The best recipe for Christmas Dinner from the 60's magazine!
Bring a touch of French elegance to your Christmas table with this incredible Pan-Fried Lemon Sole with Grenobloise Sauce! 🐟✨ In this comprehensive cooking tutorial, my husband walks you through the step-by-step process of making this classic French dish, perfect for a festive Christmas dinner or any special occasion.
From achieving the perfect golden crust on the lemon sole to creating the flavorful Grenobloise sauce made with butter, capers, parsley, and fresh lemon, this recipe is guaranteed to impress your family and guests. It’s simple to prepare, yet bursting with gourmet flavors that elevate any meal.

Ingredients:-
Serves 1
Whole Trout x 1 Gutted and head off but skin on
Olive Oil x splash
Butter (chilled) x 80g
Flour x 50g
Capers x 1 tablespoon
Parsley x 1 tablespoon
Bread x 1 slice
Lemons × 1
Make your croutons and set aside. Skin the lemon and separate into segments, then make little cubes from the segments - set aside.
Dredge the trout in the flour, shaking off any excess.
In a pan over a medium heat, heat the oil and add 20g of butter. Fry the fish, approx 8 minutes on each side, until nice and golden. Put the trout on a plate and keep warm in the oven.
Discard the cooking fat from the trout pan, wipe any excess oil with a kitchen towel. Put the pan on a high heat, and put the remaining 60g of butter in the pan in small cubes. Once the butter is foaming and brown (beurre noisette), turn the heat off, add the capers and parsley.

and drizzle the beurre noisette over it.
It is quite simple but very tasty and is perfect served with a glass of dry white wine
