Chicken Pho is "quicker" and easier than beef pho so give this a try!

Try this super easy and "quicker" version of chicken pho that won't take 84 years to make. Really not much to it! Good soup!
Recipe
Ingredients
1 onion, skin on, halved
4cm (2 inch) piece of ginger, skin on, halved
1 cinnamon stick
3 whole star anise
1 Tsp Coriander Seed
1 Tsp black cardamom
2-3 Cloves
2 Leg Quarters
1-2 Tsp Sugar or rock sugar plus extra to taste
2 tsp sea salt, plus extra to taste
1-2 tbsp fish sauce, plus extra to taste
400g (14 oz) dried rice stick noodles
Accoutrement
½ onion, finely sliced
¼ cup finely sliced spring onion (scallion)
bean sprouts
Thai basil leaves (substitute Italian basil if unavailable)
lime wedges
sliced red chilli or jalapeno
Red thai chili powder
Siracha
Hoisin
