Preserved foods are more common in the north than in the south because in the south foods are plentiful all year round whereas in the north people have to face the winter seasons where there's very little food. The most likely inspiration of Japanese Sushi was from similar preserved dishes in ancient North China or Korea, they were also the regions which Japan had the most contact with historically, whereas there was almost no confirmed contact between Japan and SE Asia prior to the 16th century.
