Korean-Style Simmered Beltfish (갈치 조림) Flavourful Korean cuisine
Experience the delightful flavours of Korean cuisine with this classic dish of simmered beltfish, known as "Galchi Jorim." Fresh beltfish is expertly simmered in a savoury sauce made from soy sauce, garlic, sugar and a touch of gochugaru (Korean red pepper flakes), bringing out its natural sweetness. This dish is delicious and visually appealing, enhanced with sliced vegetables like radish and shishito peppers. Served hot over steamed rice, Korean-style simmered beltfish makes for a hearty meal showcasing home-cooked Korean comfort food. Enjoy it as a main dish, perfect for family gatherings or any occasion where authentic flavours shine.
Ingredients:
about 500g beltfish
8 pieces shishito peppers
150g radish(daikon)
about 200ml water
Seasonings:
5 tablespoons soy sauce
1 to 2 tablespoons red chilli pepper powder
1/2 to 1 tablespoon sugar
1 teaspoon grated garlic
1 tablespoon sesame oil

@@pyq27 You’re welcome💓 Salted shrimps are actually fermented, not just fresh uncooked shrimps with salt. It’s a staple in many Korean recipes and adds a unique flavor. If you can’t find it, you can use fish sauce as an alternative, but the taste will be a bit different.

Thank you for your question! Dried anchovies are essential to achieve the desired flavour profile for this recipe. Regarding soy sauce, using regular soy sauce is perfectly fine. However, remember that regular soy sauce tends to be less salty than soy sauce for soup, which I use in the video and will result in a darker soup colour if you increase the quantity of regular soy sauce. Soy sauce for soup, on the other hand, is saltier and keeps the soup colour lighter. If you’re using regular soy sauce, I suggest adding about 2 teaspoons and then adjusting the salt to taste to maintain the right balance. I hope this helps. Happy cooking!

Pellita oil? What is that? Can we substitute it with other types of oil?
Thanks for your question! Perilla oil is made from roasted perilla seeds and has a unique, nutty flavor that’s commonly used in Korean cooking. It adds a rich taste to dishes, but if you don’t have it on hand, you can definitely use sesame oil as a substitute! Sesame oil also has a toasty flavor that works well in most recipes that call for perilla oil. Hope this helps, and happy cooking!

Japanese Shinshu miso gives the soup a mild, slightly sweet taste, while Korean doenjang creates a more earthy, robust flavor by comparison. This dish is a fusion of Japanese and Korean cuisine, created by my mother. In Korean, we would call this soup ‘Sunmu-guk.’ 😊
