My very 1st batch of dough using Casillo. A mix of 2 different flours here : 1️⃣ Type ‘0’ M, a soft wheat flour, ideal flour for pizza making 2️⃣ Type ‘1’ AROMA, with wheat germ, not only does it bring nutritional benefits, you get some bonus nuttiness in finished dough OK, honestly. Full bake of our order, 2 half-half as shown. Pretty interesting how they remove dough from its container. Self rotating pizza stone was WOW! 1min45sec total baking time per pizza, so I guess temp should be around 450degC or lower. Dough looks huge, maybe 250-280g

I am using dry yeast so it’s just a tiny little pinch. RT is around 33-35degC all year around 😅
Personally I never tried but I heard good from their flours. So good choice and also nice work with the canotto

That's amazing pizza. I usually use two cast iron pans in a conventional oven like a sandwich. You won't get the burn spots but it's pretty easy and cheap. With the biga method I just use a take out container to mix it with either vital wheat gluten (extra protein) or diastatic malt powder (extra enzymes for browning - think pretzels). A little goes a long way. Also, the best sauce is mutti hands down. You should try the biga way because it's just a lot easier.
