Hard Working "Marvadi Couple" Making Kachori Recipe | Sreet Food ASMR Vlog | Hyderabad
Crunchy & Crispy Kachori Making Process.
Kachori is a deep-fried, crispy, and flaky snack filled with a flavorful spicy stuffing. Here’s how you can make perfectly crunchy and crispy kachoris at home:
Ingredients:
For Dough:
- 2 cups all-purpose flour (maida)
- ¼ cup semolina (optional, for extra crispiness)
- ¼ cup ghee or oil
- ½ teaspoon salt
- Water (as needed)
For Filling:
- 1 cup roasted and coarsely ground moong dal or urad dal
- 1 teaspoon fennel seeds
- 1 teaspoon coriander seeds (crushed)
- 1 teaspoon cumin seeds
- ½ teaspoon asafoetida (hing)
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- 1 teaspoon dry mango powder (amchur)
- 1 teaspoon sugar (optional)
- Salt to taste
- 2 tablespoons gram flour (besan)
- 2 tablespoons oil
Process:
1. Prepare the Dough:
- In a mixing bowl, combine all-purpose flour, semolina, salt, and ghee/oil.
- Mix well until the mixture resembles breadcrumbs.
- Gradually add water and knead into a stiff but smooth dough. Cover and let it rest for 30 minutes.
2. Prepare the Filling:
- Heat oil in a pan and add fennel seeds, cumin seeds, and crushed coriander seeds.
- Add gram flour and roast until golden brown.
- Mix in the ground dal, followed by spices like red chili powder, garam masala, amchur, sugar, and salt.
- Stir well and cook for a couple of minutes. Allow it to cool.
3. Assembling the Kachori:
- Divide the dough into equal portions and roll each portion into a small disc.
- Place a spoonful of stuffing in the center and seal the edges, shaping it into a ball.
- Gently flatten it with your palm, ensuring the filling remains intact.
4. Frying the Kachoris:
- Heat oil on low-medium flame.
- Drop the kachoris into the oil and fry them on low heat until golden brown and crispy. This slow frying ensures a flaky texture.
- Drain excess oil using paper towels.
5. Serving:
- Serve hot with tamarind chutney, green chutney, or spicy aloo sabzi.
