Grilled Corn Salad
Ingredients:
6 ears of corn pn the cob, grilled ( extra-virgin olive oil, salt and pepper, then cut off the cob)
3-4 scallions chopped finely
1/3 cup chopped cilantro (or more if you like)
1 small jalapeño, seeded and finely diced (optional)
3-4 limes
1 to 2 diced avocados
salt to taste, 2 good pinches
Sometimes a teaspoon or two of honey, it depends on how sweet the corn is. Today I did not put any honey in because my corn was very sweet.
I mix everything together except the avocados and half a lime. You can make it all ahead of time up to this point. When you're ready to eat it dice up the avocados and squeeze the other half a lime over the avocados sprinkle them with a teeny bit of salt and then gently fold them in, so you don't break them up.

    Question: What's in that turmeric spice blend in the ramikin you added to your dish at the 6:03 minute? Is it the same blend you toasted off? What kind of oil did you use to toast them in? I've made a variation of this when I lived in Florida at a restaurant I worked at called The Riverwalk at Tin City. Here's a lil' secret. Instead of using rice try this with toasted orzo. Put it in uncooked and finish it in your oven for about 20 minutes or until the orzo is done to your liking. I swear by orzo now instead of rice. Toasting it gives it the consistency of rice with added nuttyness of the toast.Also gets rid of that nagging worry of how much arsnic did I just eat? lol!

    I swear by this basic principle of doing my oats overnight in my fridge as well. You can do so much with this basic morning starter for your morning protein before going to the gym. I also like to take that add some home made yogurt and other anti inflammatories and make smoothies with them YUM!

    Just got your post in MS fitness challenge's FB webpage. Came right on over and subscribed! Let me introduce myself. My name is John Wall I also have MS. I worked as a Nutrition Chef here at our Hospital here in Casper Wyoming for 10 years I just started a MS support group through the Wyoming Independent Living Center. I don't have anything on FB or UA-cam but I'm all in when it comes to food as medicine. and want that to be the focus at the support group I lead. So far after the first meeting I had 4 people show up. So it's a start. Can't wait to dive right into your videos for you can learn something new all of the time;even I am still learning new tricks to fight MS with better nutrition. The thing that I've found that turns people off is their fear of trying new things that they aren't accustomed to Or they think that it must taste nasty because you used "A" instead of "B" Our next group is next Thursday and I'm going to mention David's website as well as yours. Myself' I'm working on a couple of spice combinations one you can use as a "season all" and a couple for diabetics that are sugar free rubs & or rubs that can be used as BBq sauce or rubs. I also love to can all of my "medicines" from veggies to sauces doing most of them in the cooler times of the years. Anytime that the weather won't turn my house into an oven. MS & heat suck and cause me to flair faster than white on rice lol!

      Hi John, Thanks for subscribing! I think your support group is a great thing - just do it (to steal a phrase:), that's why I started this channel. I just decided I could reach more people showing them how I cook fantastic healthy meals everyday with a little planning and some tricks I have up my sleeve to be more efficient in the kitchen. I work full time with the elderly, who have primarily had poor nutrition most of their lives. I love to push them out of their comfort zone to try new things. I agree with you 100% people are intimidated to try new things, mostly due to unfamiliarity - even if I get 1 person to try my recipes, it's success in my book! Thanks again!

      Hi Tina, I got it so many years ago, probably 25 - LOL, still working great. The brand I have is "William Bounds Nut Twister Whole Nutmeg Mill, Polished Chrome and Acrylic" - just saw it on Amazon!
