That is not the way cashew chicken is made. That is some other area's (not SW MO) twist on the original Leong recipe. But the sauce is pretty close as you described but is just missing a few things such as white pepper. No vegetables (ever!) are put in it but diced scallions are sprinkled on top before serving. I found this video hunting for one that a Springfield woman posted years ago for a true cashew chicken recipe. Her breading technique is perfect but I don't have it written down. I'm making cashew chicken for dinner tonight since I now live in WA state and nobody serves the real cashew chicken around here.

This is not quite accurate. I grew up in SW Missouri and lived in Springfield for several years. I had the pleasure of eating David Leong's cashew chicken at the original Leong's Tea House back in the early to mid 70's. The original dish did not include the vegetables. If you ordered cashew chicken you got the crispy fried chicken with sauce and rice. That was it. People have adapted his recipe along the years since Leong's closed. Just a few years ago I ate cashew chicken again at the restaurant opened by his son and claiming to use the same recipe as his dad. However, it simply did not taste the same nor as good to me as what I remembered from the 70's. Fortunately, I was once given a recipe that I believe very closely resembles the original and have made it for over 40 years It’s so nice to be able to recreate a dish from long ago that still tastes like I remember, since for many years we have lived hundreds of miles from Springfield.
