Because it's Katakana style *か* . In Katakana か is *カ* .

Anyway, the Hiragana character So has two ways to write. It could be either: the shape of a Latin letter Z and then the curve, or the short diagonal line then the acute angle and then the curve. You can choose either the two of them, but be prepared to see it both ways when it is written.

Why do most of the kanji look so different when written, compared to the kanji that is typed (like in the video title)?
Good question! I think written Kanji especially Japanese calligraphy has many rules to follow. So when you follow the rules, written Kanji looks all similar. However typed kanji has not much rules to follow. So there are so many different styles. Here is the examples I created for you. www.shodolove.com/kanji-examples
