    I was a chef for 24 years and I've noticed when chefs, or any accomplished cook, write a recipe we are almost arrogant in how we presume a level of knowledge from the person reading the recipe. I think you showed where the glaring gaps are in this recipe. When they say 'bring together' why not say it should look like a crumble? Why not explain that a syrup should coat (or nappe) the back of a spoon? The cost of saffron makes it a luxury item, especially as you use one strand and leave 90% of the jar at the back of a cupboard somewhere, but there are alternatives, why not mention them? I think you did really well, but the recipe let you down in parts. I'm in the process of writing my first recipe book, more of a labour of love for my daughters and grandchildren than a commercial enterprise, but I learnt a lot from this video. Thank you.

      I love this! Glad my inexperience could help! I have definitely had some learning curves. In my jam and custard doughnut one, I think the book said to cook the custard “until custard consistency.” I had never had a custard and therefore definitely did not cook it long enough! Oh well.     Thanks for the vid, can you tell me how it's been behaving since the last time you reviewed it? I make a lot of bread at home so I just want to make sure it can withstand the amount of work I'll put it through. A friend of mine was using an artisan mixer to make her bread dough and in a couple of months the gears started to wear, and KitchenAid did not want to honor the warranty as they told her that it was made to only be used once a week with heavy work and no more.

      Oh interesting. I’ve had the 8 qt for almost a year now and I use it multiple times a week to make double batches of breads, and scones (pretty dense dough). It is holding up great. The motor still sounds quiet and solid. I could definitely see where the artisan one isn’t standing up to making breads much. I only use my artisan one to make icings and cakes anymore. S’mores Bars 8 cups Golden Grahams cereal 6 cups mini marshmallows, divided 1 ½ cups milk chocolate chips ¼ cup light corn syrup 5 tbsp butter 1 tsp vanilla Place cereal in a large bowl. Melt 5 cups of mini marshmallows, chocolate chips, corn syrup, and butter either in the microwave or over the stove until melted and smooth when stirred. Stir in vanilla. Pour over cereal and quickly toss until completely coated. Stir in 1 cup mini marshmallows. Press mixture evenly into greased 13x9 in pan. Let stand uncovered for at least 1 hour, or refrigerate for a firmer bar. Cut to desired size.

    the red unit likely needs fresh grease, depending how much you use these and the types of grease used, they typically need new grease every year, Mr Mixer has several videos on how to do this

    Für die Kitchenaid gibt es auch ein Rührer mit Silikon. Wenn man si kurz auf 1 stellt kann man Mehl einfüllen ohne das es wieder rausfällt.

      Yes they do make a silicone scraper for the KitchenAid, I just haven’t bought it yet. I’m not sure how well I had the splatter guard on when I started the mixer, I don’t typically use it. Usually I do just start it slow to keep the mess contained. Thanks for watching!

    I see all is for USA. Is 8 gt avaible for Estonia, we have not 120 volt, but have 240 volt and pluging 2, not 3?

    Great informative video. What’s the difference between KSM8990, KSMC895ER and UK model 5KSM7990XB ?

      The KSM8990 is like mine, the KSMC895ER has the metal bowl guard. As far as the UK model, what I can tell with a quick search, is it is similar to the KSMC895ER. Someone correct me if I am wrong, but I would think the main difference would be the outlet plug would match the UK instead of the ones in the states. All the attachments should still work, but I’m not positive. Hope that helps, thanks for watching!

      I have put up to 9 cups of flour to form a soft dough in it with no issues. There is no where in the manual or instructions that gives you a limit. Just have to play with it a little, I guess.

      Not sure how well the translation works on here. But, you do need a specific 5 quart bowl to fit the 8 quart Commercial KitchenAid Mixer in the video.     I am 64 and just last week made my first sourdough round loaf which turned out great with the help of UA-cam. Since I am now an expert I would compliment you on your improvising with the baking pan. One suggestion is to brush off the excess flour before going into the oven and perhaps remove the lid half way and let it brown more. I was afraid of over doing the "browning" phase but it seems a lot of folks like a deeper burnt edge look to the ear that sticks up. Personal preference at the end of the day of course.       Haha isn’t that the truth, we can all be experts with UA-cam 😂 Yea, I do think I should’ve brushed off the flour as well, definitely still learning. I did remove the lid part way through, but I had no idea how little or much it would brown after I took it off. I have seen sourdough bread that does look almost burnt. Thanks for watching!       I’m glad you enjoyed it! I absolutely love the commercial one for double batches. I sell some baked goods in the summer at a farmers market and this gem has made that process so much faster and less stressful.

      ⁠@@lrbogoyes it is the contour silver. I purchased mine through KitchenAids website directly. I have a link in the description of the video to buy it, but it’s through Amazon. It’s the same product either way. I just don’t know how the warranty stuff works out through Amazon.

    I love Sourdough! Have never taken the time to make my own as I knew it was a bit of a process to get going... Was very surprised how it looked those first few days! Definitely not what I expected!! Hope your bread turned out well! Looking forward to the next video

    An important advice regarding the Commercial (aka Heavy Duty and also the Pro600 ) KA, it doesn't have the safety plastic gear that protects the motor. So be aware and use it without demanding too much of it. Since the motor and gears will damage and will need to be entirely replaced (which costs similar to buying a new one).
