Flashback to about 10 years ago, you’d see a young woman, categorized as overweight, who far from made good health choices. I struggled with my weight for many years, and didn’t always feel comfortable or confident in my body. My weight would often yo-yo because I really didn’t know what I was doing, nor how to achieve sustainable weight loss. About 5 years ago everything changed when I really started making my health a priority in my life, and I have gained a wealth of experience and knowledge while truly finding a passion for living a healthy lifestyle.
And now, one of my goals in life is to help others feel the same way, and feel their healthiest, strongest and most confident selves! I took to plunge in getting a Nutrition Coaching Certification from NASM so I could successfully guide my clients into a healthy lifestyle!

Finally a cheesecake you can eat and still lose weight! This caramel apple protein cheesecake is the perfect addition to a healthy diet especially if you've got a protein or weight loss goal to hit, but also if you're trying to be healthier overall and reduce refined sugar intake.
It's creamy, just the right amount of sweetness, and SO easy to make!

INGREDIENTS
Cheesecake
24oz low fat container cottage cheese
3 eggs
3/4 cup Legion salted caramel protein powder (save 20% with code 2XW) legionathletics.com/products/supplements/whey-protein-powder/?r=26ygo&
1/8 cup stevia
Apple Topping
2 apples
2 tbsp homemade caramel (whisk 1/8 cup each of olive oil and pure maple syrup) ua-cam.com/users/shortsVdUNs_gsZQo?si=1BtrBz7NZW7nWzJS
1-2 tbsp brown sugar alternative
sprinkle of cinnamon
DIRECTIONS
•Preheat oven to 350.
•Blend all cheesecake ingredients until smooth.
•Pour into a 9" breakaway cake pan lined with parchment paper
•Bake for about 30-35 minutes, depending on your oven. It should only jiggle slightly when shaken.
•Let cool completely before storing in the fridge.
•To make apple topping, skin and dice your apples and add to a hot pan with your homemade caramel. Add brown sugar and cinnamon and cook until softened.
•Add toppings with an extra caramel drizzle before eating and enjoy!

Milk, protein powder and a bit of matcha for green color. You can also use spirulina for color (you can use dyes but i was trying to avoid that)
