How to Choose The Best Cutting Board For Japanese Knives
When protecting the sharp edges of your Japanese knives, the cutting board material is crucial. Aomori Hiba wood and walnut wood are two excellent options. Aomori hiba, from cypress trees in Japan's Aomori prefecture, has a tight grain and lacks resins, preventing premature blade dulling. It's also naturally antimicrobial and smells great. Walnut, another hardwood, has a closed grain structure that doesn't dull knives as quickly as open-grained woods like oak or ash. It's dense and wears evenly with simple care like oiling. Plastic or bamboo may seem convenient and cheap but have downsides; plastic can scar and dull blades, and is harder to sanitize. Bamboo's hardness can damage delicate knife edges over time. Even harder materials like glass or stone can be detrimental to the longevity and sharpness of your cherished Japanese knives.

Western Chef's knives have got other advantages e.g. ua-cam.com/video/5z_d0soK1cI/v-deo.html maybe use them both..... They are both designed centuries ago for special tasks/special food... don't underestimate them...
The twisted strap and makeshift knot on that apron are somewhat distracting. And you could dial down on the elongated "ehms". Otherwise likeable presentation.

I‘ve been living in Japan since 2016. It is very different from western society and yes, one of the thing is oven. We have a microwave with oven mode but it’s not like the oven use in western society. But it’s better than nothing. Anyway one of the big reasons why people don’t have an oven is that here is not that much space for it. Some people live in 15m2 apartment which is crazy small. There is just not enough space
I love it, but the way the board tries to fall forward is super intimidating. Might want to consider a heavier wood, or weighting the bottom

About 2 years ago I got on a Japanese kitchen knife kick.. and I don't regret my choices... The 6 inch Nakiri and the 9.5 inch Kiritsuke get the most use for me personally. The Shun carving knife as well, but that is only when I have larger meats as a rule, but wow... I would suggest getting stainless steel unless you remember to clean and dry the knife after each use... Two of the knives I bought are high carbon steels and they will rust if you don't look after them. But the Kiritsuke, which is Blue Steel ( a grade on steel) is still razor sharp, I have not sharpened it yet... and I have various diamond, and wet stones for the task. And I guess lastly, don't be taken in by cheap Chinese knock offs, do your research on the manufacturers. A good knife will last you a lifetime, or near enough if you get my point. Not the edge obviously... if you don't want to sharpen them yourself, Shun for example has a lifetime sharpening. Of course you would have to mail it in etc...
