Appreciate you sharing your techniques with us, but I've got a couple of questions; You mentioned butter at least twice, but didn't show when/where/how you're using this. You basted in tallow while smoking, but said something about adding butter later - during the rest? Also, you didn't show anything about the rest - are you resting it just open on the counter or a heated cabinet? Or tenting it in foil, or wrapping more tightly or what? Is this the step where you're applying the butter? Thanks again, and good luck with the new channel, glad you guys are doing great and I look forward to visiting you sometime!
We pulled them at 125 and placed in a large aluminum pan, melted a lb of butter and dumped it over the top before cut into it. It sat in the pan uncovered for roughly 45 minutes before cut into it
Just cooked a prime rib today, drenched it in tallow as well. but for the last hour I cooked it in an aluminum container to catch the drippings. sifting the excess tallow, added garlic and thyme. Cooked the tallow in the oven, then poured a spoonfull over each slice.

That Jeremy character is a bit hung up on his own personal tastes as the end all be all rather than just great food. Comes across as a snob and a self proclaimed know it all.
He’s a very good person, I would sit down and hang with him any chance I got.

Looks amazing! I really like the idea of beef tallow basting! I wonder if infusing the tallow with some herbs would make a difference.

No acrid aftertaste in the meat from that much smoke? I'm starting to think this may be why I usually prefer restaurant BBQ to my own, running clear smoke the majority of the time. Thanks for the vid.
Good question! I never notice an acrid aftertaste with the bundle fire method.

Many people don't know what a bundle fire is. And I see you used charcoal to create your coal bed, which is great. Most people on UA-cam build infernos with just expensive firewood. Hopefully you can incorporate fire building instruction in future videos.

I never thought about basting beef with tallow 😂 that’s a good idea. I’ve always just used apple juice, water, or apple cider vinegar. I also didn’t know the tallow would add extra color to the meat. Good information my man!!
It definitely makes a difference in the color and flavor!
