"Caribbean Spice: Exotic Grilled Jerk Chicken" 🇯🇲

### Ingredients:
- 4-6 chicken thighs or drumsticks
- 1 tablespoon olive oil
#### For the Jerk Marinade:
- 3 green onions, chopped
- 1 onion, chopped
- 2-3 Scotch bonnet peppers, seeded and chopped (adjust to your heat preference)
- 3 cloves garlic, minced
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/4 cup soy sauce
- 1/4 cup white vinegar
- 2 tablespoons brown sugar
- Juice of 1 lime
### Instructions:
1. **Prepare the Marinade**: In a blender or food processor, combine all the marinade ingredients and blend until smooth.
2. **Marinate the Chicken**: Place the chicken pieces in a large zip-top bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well-coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight.
3. **Preheat the Grill**: Heat your grill to medium-high heat.
4. **Grill the Chicken**: Remove the chicken from the marinade, letting any excess drip off. Lightly brush with olive oil. Place the chicken on the grill and cook for about 6-8 minutes per side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
5. **Rest the Chicken**: Once cooked, remove the chicken from the grill and let it rest for a few minutes to retain its juices.
6. **Serve**: Enjoy your jerk chicken with traditional sides like rice and peas, grilled vegetables, or a fresh salad.
