Most goalies now are always in butterfly
Stand-up just isn't effective anymore skaters are too fast and the shots are a lot quicker, most goalies are big enough to cover a lot of the top of the net while in the butterfly as well.
The purpose of this drill is to help goalies with correct save selection, tracking the puck off the stick and not just dropping and reacting. Most goalies are butterfly because of something called Box Control. The net is smaller in front of you and the butterfly helps you fill a larger percentage of the net.

Butterfly c cuts are very similar to standing c cuts. Look up other videos about rvh and they should talk about hinging or rotating on the post. It is a very similar skill
