I know this is relatively old but question - when I CTRL+3 to apply Subdivision, my Subdivided shape in my Viewport looks quite a bit different than yours.. The tip of the shape doesn't come any where near the actual tip vertex and it just looks a lot smaller and softer than yours. Any idea why this happens?

I guess this is great if you already know all the hotkeys and shortcuts

I have a problem at 2'47. When I try to transform the new object into a "curve", I get the polygon that encompasses the shape, but not the precise shape of the shoe... Any idea how to do that?

0:51 I'd like to suggest something: instead of creating more vertexes and faces, just add a mirror modifier. Way quicker and lighter.
