    I don't know,I did mine differently. It was a bit of work, but a lot less than this. I would peel and wash my potatoes whole keeping them in water when not handling them. Then I would shred in my food processor immediately returning them to water so there's no color change. Finally I pull them out of the water using clean dish towels I would dry them well and use my vacuum sealer system to bag them all up. No precooking needed. When I used them they cooked up just fine. I also used this for "getting rid of" potatoes that were close to going bad, and potato cubes for soups stews and casseroles. Never precooked anything. All worked out great.

    Just found your channel! and now I am subscribed. Addressing your plans for the day hint, I have a journal with the sole purpose of writing down what I want to accomplish that day, It feels so good to check off the chores I have completed at the end of the day. I also check it periodically throughout the day so if I have a minute I can refer to my journal (which I date) to help me focus. If something happens, and I don't get to the chore, it goes down for the next day. I give myself a lot of grace and try not to list more than I realistically can do in a day.

    My bread looks good on the outside, but when I cut the bread after it cooled completely I noticed that the bottom 1/2” of the bread is gooey. I used a thermometer to check the temperature and it was 208 degrees. Any suggestions? Anyone?

    We used that same method at a restaurant I was working at. The leftover baked potatoes would get run through our big mixer grating attachment, spread out on large sheet pans, and frozen. Great way to store large quantities of potatoes. Very helpful video. We enjoy your tips on food preservation as we also buy bulk quantities for the savings

      No it is evaporated cane sugar juice. So it is the crystals of the sugar cane, not the super processed refined sugar from the store.

    I tried to make a starter. After the first 2 feeds it was bubbly and rose nicely. After that I fed it and it is not hardly bubbly and hasn’t risen. It doesn’t seem moldy but I don’t know what to do??

      My first thought is the warmth of your kitchen. If it is not moldy, it just seems inactive and not alive. Try putting it in a warm spot like the oven with a light on after you feed it. See if that helps. Sometimes it just takes more days then others to get one starter and that has to do a lot with each kitchens humidity and temperature.

      Thank you for the kind comment! I buy yellow onions from Azure and they don't specify what variety it is. I believe it is a good storing yellow onion though. Unfortunately, I can't link the dress because I thrifted it! The tag is from GAP though. It is so comfortable!

    Thank you for reminding us that it’s ok to just get started with one item. Also, to do what we can, we live in a 20 by 20 shanty for 4 people, so storage is a sad reality in my kitchen… but I can shift from say a 2 lb bag of rice to a 10 lb bag and so on.

    When I pour the Carmel it hardens and it doesn’t come out right? What could I be possibly doing wrong?

      The most likely cause is there are sugar crystals stuck to the side of the pan that didn't get fully dissolved. It will cause the whole pan of caramel to harden. Try scrapping down the sides to make sure every bit of sugar crystals are dissolved before pouring. Hope that helps!

    Your’s is the fifth video on sour dough starter I’ve watched today. I’ve come to the conclusion that a sourdough starter is about like having a pet. You have to feed them, water them and discard their waste….😂😂😂

      Yes you do need a binder! I use them differently depending on the recipe I am making. For any kinds of breads I would use psyllium husk powder. For baked goods I will use xanthan gum. So I would say you just need those two binders!

    I am trying to figure out which book has the recipe for your gluten free flour mix and recipe for making tortillas. I see you have a book that is both gf and not gf. Is that where it is? I am not sure why I would buy a book that is both gf and not gf. Are the recipes in the not gf part of the book safe for gf folks? Is the recipe in the GF Homestead Pantry book?

      The Ranchers Homestead Digital Cookbook is all regular recipes that can all be converted gluten free with simple steps. I say in each recipe how to make them gluten free if needed or if they are naturally gluten free. Along with a whole gluten free section with just gluten free recipes. I did my cookbook that way so that everyone could benefit whether you have to eat gluten free or not. The GF flour blend recipe is in that digital cookbook in the gluten free section. The gluten free tortilla recipe is on the blog as a post, not in either purchased digital book.     Powdered sugar works better, it dissolves better. I use 3 parts powdered sugar and 1 part borax. I premix it then put just enough water in to wet it but not make it runny. That way you can just spoon a small clump any where needed.

      I know this is a late reply but if this happens again just add in splashes of water until you have a dough that comes together and is slightly sticky. Hope this helps!

    Okay... my bread didn't come out right.... it didn't even turn brown but it had an internal temperature of 206°! What am I doing wrong?

      Did it rise well? Did you put a couple ice cubes in the dutch oven in between the parchment paper and dutch oven than place the lid on to create a steam affect? If I forget the ice cubes mine never browns.

    I really like your well organized and neat pantry. One thing I started doing is keeping my rings on my empty canning jars to prevent chipping the top edge if I knock one over. Makes looking for and storing easier for me, too

      I buy the parchment sheets from the Azure standard, which are 12.5"x16" I absolutely love them! But before I bought the sheets I would just use a roll of parchment and cut out what I needed when I needed it!

      Thank you! I have my first load in the oven right now.... Everything seemed to be going well... except when I was trying to be gentle transferring the bread from the bowl to the parchment paper....I think it came out too hard and may have deflated!😢 Hopefully will still be good....

      I apologize if the video is inaccurate. The measurements are always discard all but 40g of starter, feed is 125g warm water, 65g sorghum flour, and 65g brown rice flour every day if it is on the counter.

    i used bobs red mill brown rice flour for teh starter and then used King Arthur measure to measure to make the bread. The dough was gritty, It rose but baked into a brick.

      In a pinch using all brown rice flour for the starter is ok, but I don't recommend it. To get the most alive and active starter I recommend using both sorghum flour and brown rice flour. The two grains combined work wonderful! I do not recommend using a measure for measure or gluten free all purpose flour blend when making anything with yeast, especially bread. You will never get the accurate texture. The reason is, gluten free blends are made up of many starches with some grains and you need more grains then starches in a bread. I would recommend using the recipe for my gluten free sourdough bread below, with the same flours I use to get the most accurate results!
