LETSGOOOOO Took me two days, around maybe 5 hours total fighting this guy. Got titled and put the game down, came back after 2 hours and beat him immediately after booting the game I love this game (Edit: I had no idea what the mikiri counter was, and wasn't checking the skill tree)

So I checked the wiki, and the Square Off Heavy deals 40 poise damage, and costs just 6 fp (I think, I'm too lazy to check again) Most bosses usually have 80 poise, some have 120, and a few might have more than that. So you could easily poise break most bosses in the game with a sword you can get immediately after starting the game. Sounds about right.

Sorry for the really long break, got sick of the UA-cam thing Anyway, I found a strong Skull Build with the Daudalus Hammer that triggers the Omega Attack whenever you retrieve the skulls. PS: I'm not used to playing on Keyboard and Mouse for this game lol

sadly no unless you mean to use the mortal blade which is only a combat art. you can use mods to change the cosmetic looks of your sword etc
