The Robert Mondavi Institute for Wine and Food Science at UC Davis is home to the university’s winemaking, brewing, and food science programs and their facilities. Through quarterly lectures and events, the institute provides the Departments of Viticulture and Enology, and Food Science and Technology a prestigious forum for collaboration and outreach, built around the central mission of enhancing public understanding of wine, brewing, and food sciences.
Savor: Open Kitchens - Transforming Food Service through Community, Culture, and Ethical Leadership
We often ascribe the concept of “healthy” to food, but what do healthy foodways look like? On December 5, 2024, we hosted a conversation among three visionary chefs leading change in the food service industry through transparency, labor justice, and storytelling through food. Using food as a tool for both community and political engagement, these chefs are building new models of food service that prioritize the integrity of fresh ingredients in hospitals, and workers’ rights in restaurants. Through a spirit of ethical, cooperative leadership, this panel will discuss how to activate simple yet radical approaches in the food industry and create menus inspired by place, migration, and community.
Speakers include: Chef Norma Listman Sanchez, a Mexico City-based artist, chef and co-owner of Masala y Maiz; Chef Saqib Keval, a food justice organizer, public speaker and co-owner of Masala y Maiz; Chef Santana Diaz, director of culinary operations and innovation, and executive chef for UC Davis Health; and moderator Audrey Russek, curator of food and wine at the UC Davis Library.

20:00 - is it bifidobacteeria infantis that is available in swiss cheese?
15:45 - human's can't synthesize omega-3s. Humans can only synthesize omega-9. It was not clearly explained why omega-3 are in human milk. My best guess is that it allows for developmentally advantageous cell signalling and that it keeps the baby cool. I do not think omega-3s play a beneficial role in gerontology/longevity but at infancy, they could be provided for the reasons I stated and to prevent vitamin deficiencies.
Another guess, would be to prime ROS by exposure to lipid peroxides which come primarily from omega-3/6 and protein breakdowns...
In Feb 2016 I spent a week in Vilnius Lithuania many of the pubs there offer dozens of meads I tried them all:)
Thank you for this presentation. I learnt a lot, especially about history. I am from India, a colonized and exploited country for 400 years. As you educate us on your past and present, I respectfully request moving away from the usage of "Indian" to mean "Native" of any land. That usage has a racist and imperialist past. Let's bring back Native Californian names of places, wildlife, and plants. We don't need to call it "Indian lettuce" -- the plant has native names, we can all learn to use them.
