For the Sauce 👉🏽 Use Tamarind Paste or Dissolve 2tsp tamarind block in hot water, strain through a sieve. Sriracha Sauce Fish Sauce Sugar (Taste and balance the flavours to your preference) 👉🏽Marinate chicken as per your choice. I used garlic ginger paste, salt, pepper, chili flakes, lemon juice, coriander & cumin powder, smoked paprika. 👉🏽Soak Rice Noodles in boiling water for 5 minutes. Rinse with cold water and set aside 👇🏽To a hot pan add: Cooking Oil The marinated chicken - fry for a minutes or so Then Add 2 Cloves of sliced Garlic & Slice onion 👇🏽Push to one side then add: 2 seasoned whisked eggs - cook through then add 1 Large carrot - thinly sliced Beansprouts will taste amazing! So if you have any add this too. Add in the Rice Noodles and Sliced Spring Onions Add the Sauce mixture. Mix well. After a few minutes. Check the noodle has cooked through. Taste and season as required. Garnish with some crushed roasted peanuts, a sprinkle of chili flakes. And don’t forget to serve with wedges of lime! Enjoy!
I have tried this recipe twice and although it tastes great using the stated measures, the ninja gives a low water warning as soon as the pressure is reached, so I have turned the machine off and left the pressure to release naturally. Tonight I added 3 cups of stock to 2 cups of rice and used low pressure for 10 minutes releasing naturally. Perfect!
To a bowl add: 1 Cup Couscous 1 Cup boiled water Cover and leave for 5-10mins (set aside) To approx ~200g prawns add Salt & Ground Black Pepper 1.5tsp Ground Harissa Powder 1tsp Chilli flakes 1tbs Butter Or Olive Oil Pan fry for a couple of minutes (set aside) To a hot pan add ~2tbs Olive Oil or Butter 2 cloves chopped garlic 1 medium sized chopped onion. Fry till light brown. Then Add veg of your choice I used: ½ cup diced Carrot ½ cup Green Beans ½ cup Sweetcorn Mix everything well, taste and season if required. Garnish with fresh coriander or parsley, serve and enjoy.
(Serves 2-4) To Make: Wash and soak 3 cups of biroin Chal (glutinous rice) To a hot pan add 2-3 tbs Oil and 1 Large sliced onion - fry till golden brown. You can add a little minced fresh ginger but this is optional. Then Add the drained rice and salt to taste. Lightly fry for around 2-4 minutes. Add approx 3.5 cups of water, or enough just so that the water is slightly above the rice. (This will vary with the different brands of rice used) Cook on high for a couple of minutes occasionally stirring. Then on low heat cover and cook. After 5 minutes gently turn the rice. cover and leave for a further 5 mins or until the rice has cooked through. Garnish with crispy fried onions. Serve hot and Enjoy! 🍚

Wash 1 cup of split red lentils, soak in a little water and set aside. Peel and slice the bottle gourd and set aside. (I used a QTR of a bottle gourd and cut into 1cm slices) If you don't have bottle gourd you can use any type of squash or pumpkin. To a pan add a little oil, 4-6 cloves of sliced garlic,1 large sliced onion and salt to taste. Cook till golden brown then; Add 1/2 tsp turmeric powder, 1/4 tsp coriander powder, 1/4 tsp chilli powder. Cook the spices for a minute or so then drain and add the soaked lentils. Cook for 2-3 minutes on medium heat. Then add the bottle gourd. Cook on medium for 5 minutes. Occasionally mixing gently. Add sliced green chillies for extra heat. Then cover and cook on low until the gourd has cooked through. Garnish with plenty of fresh coriander.

With BBQ and picnic season here, throw together this cooling Coleslaw. Light, fresh and delicious! You can eat this on its own or enjoy as a side dish as part of a main meal. Adjust to your preference. In a bowl mix: 🥬Qtr Finely Sliced Cabbage 🥕2 Large Shredded Carrots 🧅Tiny bit of onion (as this can be overpowering) 🥗 Iceberg Lettuce 🍅 Handful of Tomatoes I used Baby Plum Tomatoes 🌽 1/2 Small Tin Sweetcorn 🌶️1/2tsp Paprika Powder 🍯1tsp Dijon Mustard 🍋Squeeze of Lemon Juice 🍶Mayo. Or a Mix of Mayo and yoghurt 🌿Fresh Dill 🧂Crushed Black Pepper

Fattoush is a classic Middle Eastern salad. A crunchy, vibrant and light side dish which typically includes a few salad items covered in a zesty, herby dressing and served with fried pieces of pitta bread. This is how I made my version of Fattoush with what I had to hand, but i have listed all the typical ingredients you find in a Fattoush. Dice all the ingredients: 🥬Romaine Lettuce 🍅Tomatoes 🥒Cucumber 🫑Green or Red peppers 🧅Onion (use less as this can overpower the salad) 🌰Radish (optional) 🥬Red cabbage (optional) 🌿Fresh Parsley - I used Coriander 🫐Pomegranate Seeds (optional) For the dressing: 🍶4 tbs Olive Oil 🧂<1/2tsp Salt 🧂Black Pepper 🧂1tsp Sumac 🌿½tsp dry or fresh Mint 🍋Juice of ½ Lemon 🧄1 clove of minced garlic (optional) 🍯Pomegranate Molasses (optional) 🫓 For the bread I used mini Tortillas instead of pitta. Brushed with olive oil, cut into small pieces then air-fried until crisp. - These tasted great on their own! Assemble by tossing the salad in the dressing, and thoroughly mixing using a spoon or by hand. Sprinkle over the pieces of crisp bread, serve and enjoy!

The perfect cold pasta dish for all Tuna Lovers! Ideal lunch, or side dish for picnics and BBQs. You will need: 🫓Boiled Pasta 🍅Tomatoes 🥒Cucumber 🥬Romaine Lettuce 🌽Sweetcorn 🐟Can of Tuna (drained) 🌿Dry Coriander or Parsley 🧂Crushed Black Pepper 🫒Capers or Olives (optional) 🍯1/2tsp Wholegrain Mustard 🍋Lemon Juice 🍶 Seriously Good Mayo Optional Extras: 🫑Diced Peppers 🧅Onion or Spring Onion 🧀 Feta Any Salad Cheese Combine all the ingredients, and adjust seasoning to your preference. Serve straight away or store in the refrigerator for later. Enjoy!

1.Prepare the Sauce and set aside. My version of Bang Bang Naga Sauce: ua-cam.com/users/shortspYBufVt-JuI?feature=share 2.Prepare a slaw by mixing finely sliced or grated red cabbage (1.5cup), 1 large carrot, 1 shallot or small onion, salt and pepper to taste, plenty of lime juice and fresh coriander. Add any other salad to your preference. Set aside. 3.For the breaded prawns you can use shop bought or you can make your own jumbo prawn butterfly. To make you own remove the head, devein and de-shell the prawn, leaving only the tail intact. Make a slit into the back of body, and gently flatten (or you can keep it whole). Rub with a little paste made of grated garlic or powder, salt and pepper, chilli or paprika powder. Dip into egg then breadcrumbs, double dip if required. Fry as required until golden brown. 🍤 To assemble, warm up the taco shells or use soft tacos. Add your slaw, crunchy prawns, bang bang naga sauce, a squeeze of lime juice, and sprinkle of fresh coriander. Serve up & Enjoy!

BANG BANG Naga Sauce Great as a dip in wraps, on fries, tacos.. with samosas, daler bora, with anything really! So easy to make, just mix up the following ⬇️ 1cup mayonnaise ½ cup Sriracha Sauce ½-1tsp Mr Naga Pickle or chilli pickle (adjust to preference) Sugar to balance as required Garnish with Fresh Coriander Enjoy!! 🔥

I'm not one to hate on food but I always give it a go EVERY Ramadhan to see if I like it and I always hate it.
Rooh Afza Mango Lassi🍹 To make your standard Mango Lassi you will need: (serves 2-3) 1 cup crushed Ice 1.5 cup of mango pulp or fresh sweet ripe mango 1/2 litre of milk 1cup plain or greek yoghurt 2-3tbs sugar (adjust to preference depending on sweetness of mango and the amount of Rooh Afza you use) Pinch of Salt Pour some Rooh Afza to the bottom of you glass, fill with mango Lassi and garnish with cubed mango and enjoy!!
Kacha Chana | Kasa Sana Kacha Chana (Soaked Split Chickpeas) is a delicious and nutritious salad. To make kacha chana salad you will need: (serves 4) 1 Cup Chana Dal (Dry Split Chickpeas) Fresh Ginger (minced) 1/4 Red Onion 1 Fresh Green Chilli (optional) Tomatoes Cucumber Handful Fresh Coriander Salt to Taste Lemon/Lime Juice Take 1 Cup of Chana, wash several times and soak in hot water. Soak for several hours. Wash drain and set aside. Mince more than >1/2tsp of fresh ginger. Finely slice one green chilli, and chop the coriander. Dice the onion, cucumber and tomato. I used cherry tomatoes but you can use salad tomato. (De-seed) Combine all the ingredients. Add large pinch of salt to taste. Large Squeeze Lemon or Lime juice. You can also add finely sliced Bangladeshi Lemon, with the rind. Serve alongside other iftar items. Enjoy!

Mixture of Oil & Ghee approx 3-4tbs (adjust to preference as the pesto also contains oil) 1tbs chopped Ginger & Garlic 2 Small Onions - Cook until golden brown 1 Chopped Tomato Salt to taste. Add 1 med sized Chicken 8 pcs. Cook until light brown. Add 1 tbs Red Pesto Mix 2 tbs of yogurt with 2-3 tbs water plus A Squeeze of tomato ketchup 2tsp Coriander Powder 1.5tsp Cumin Powder 1tsp Chilli Powder 1/2tsp Black Pepper Add mixture to pan and cook till preferred consistency. Add fresh chillies and garnish with fresh coriander and a sprinkle of Garam Masala. Enjoy!
