Thank you for your work plus making the values understandable by this cook and canner. I want to know how to safely provide hot food on a picnic for a crowd, ie. family reunion.
There is something wrong, because parasites are able to survive in food, that is animals that we eat, for example anisakis in many fishes...

Thanks a great deal young lady for information and video ! Is " CEVICHE - CEBICHE " ( very small chunks of fish marinated "they say" " cooked ?" in lime juice for about 2 hours ) the right breeding ground or growing broth for botulism to onset ? Thanks for your response as well !
Clostridium botulinum cannot grow in pH levels below 4.6, lime juice has a pH range of 2-3 (very acidic) so there’s no risk. Also, the bacteria is only present in anaerobic environments (no oxygen, i.e inside of a sealed can)

When we have a water activity of 0 does it mean we have no water content whatsoever in our sample, or is it just no free water available besides the bound water? 4:14

Greetings, Dr. Dicaprio. _"There is no evidence to date of viruses that cause respiratory illnesses being transmitted via food or food packaging."_ (COVID-19 and Food Safety: Guidance for Food Businesses: interim guidance) We are hearing people interpreting this statement to support the argument that, if someone infected coughs or sneezes directly on food (e.g. a salad, an apple, a steak, sushi, etc.) and then someone else eats it within 1h, then it is *very unlikely* to get infected. However, min 6:30 it appears to indicate that, while SARS-CoV-2 is *not foodborne* , smear infection could still be possible if a contaminated surface reaches the mouth's mucous membrane (it is not clear to me if food, in principle, *can never* be considered to act as a fomite). I would greatly appreciate it if you could clarify if that argument holds true or not.
Oops, it went away again. Sorry to be high maintenance, but this is frustrating.
Problem solved when I watch through UA-cam rather than using the UCANR page directly.
When I play the video, there is only audio, no video. I see the thumbnail views of the slides if i move the cursor along the timing bar at the bottom of the screen, but they are too small to read. What am I doing wrong?
