    Thank you for making this video, I live in England but I have learnt how to make miso soup with dashi and I love to eat it in the morning with carrots, tofu and any vegetables I need to eat in my fridge, I feel such vitality when I eat this. Now I will start eating this soup too!

    Nice Simple recipe. I've been wondering about Somen for a while. This is a nice way for me to try it. I'd like to gently correct you on one point. Adding an acid to the water makes it acidic, not alkaline which is it's opposite.

      Thank you for watching. Your comment was also helpful. I misunderstood that vinegar is acidic, but when we eat it, it turns alkaline. I was wrong. But it is true that boiling it with vinegar makes it taste better, so please try it. By adding vinegar while boiling, the somen noodles become more delicious due to the power of citric acid. I apologize for the previous mistake. Thank you for your helpful feedback.
