      I have done this before too and I really enjoy it! It’s also a great option for someone who doesn’t have a high sear feature or hot spots in my case 😂

    I definitely gotta try this. My first attempt at wings on the traeger was a bit of a flop. Super tender and juicy meat but the skin didn’t crisp up. Using the edges of the grill might be the secret I was looking for!

    My pellet grill don’t really have a hot spot.. any suggestions on another way to crisp them up ??

      Another way that I’ve tried before and works decent is smoking at lower temperatures and then raising to 450 to help crisp. I’ve also seen the air fryer hack where you smoke them to 160 degrees and the finish off in the air fryer for crispy skin.

    Weber and a vortex, then a give them a quick fry for 1-2 minutes. They have been my favorite way to cook wings. I even have a kamado Joe with a rotisserie basket, but the Weber/vortex combo has been my favorite method. I also love the kosmo Q dirty bird

      @@WereAllChefs it’s really good. Be careful if you’re picking up from a store though. I’ve accidentally gotten the Hot Dirty Bird. I enjoyed it cause I love spicy food, but the family did not 😂. Made excellent spicy, smoked wings though

    Maybe drop the temp to 325-350?

      I have tried at 325 before and turned up the heat at the end to crisp up the wings but through my experience, running at 375 the whole way through has given the best result! Every grill is different though.

    Just found your channel and I've subscribed...chicken wings and steaks (with hot sauces) I grow my own hot peppers and always looking for ideas to make new sauces....here in Canada we don't have jalepeno/garlic powder...will make my own....keep those videos a coming....a new fan !!!!!!

    Awesome video my sauce is almost the same. One thing that helps the cheese incorporate a little easier and not get gritty after it starts to cool on your plate is to reduce the cream especially the great value brand. It has a lot of water if you let it reduce before throwing the cheese in it'll mix super smooth. If you ever feel like trying while it's reducing throw in a shot of vermouth white wine then let it reduce. It's so good.

    I love chicken fajitas so I’m definitely going to try this out at home. On another note, I think this video could’ve done with like a short like 10-20 second intro of B-Roll and also I think it would’ve been better if the music was lower when you were talking. Otherwise great video, super high quality camera work and cooking 👍🏽

    Swordfish is delish man. Good work. Love uncle Chris seasoning. Cousin Debbie from San Antonio always brings us some from Texas when she visits. Some time I’m curious to see a beef short rib smoke. Always wanted to do a cook with them but never got around to them yet.

    I use that same seasoning on all kinds of stuff. It’s surprisingly good on French fries right out of the airfryer.
