1.5 lbs of cooked Corned Beef, 1.5 lbs of gold potatoes cubed (peel if you want), 1 red bell pepper, 1 yellow onion, paprika, ground mustard seed, chives, black pepper, oregano, olive oil, butter. Hope you enjoy!

Irish Soda Bread for St. Patrick's this year! Ingredients: 4 cups of all purpose flour. 1 tsp of baking soda. 2 cups of buttermilk. 1 Stick of Irish butter. 1 egg. Pinch of salt. Made RI clam cakes tonight at home. I used Iggy's clam cake mix. I used 2 cans of minced clams with a jar clam juice and dried herbs: parsley, chives, and thyme. 5 minutes at 330 F using vegetable oil. Makes me miss RI. Hope you guys enjoy!

I made these homemade stuffies tonight. They came out awesome. Ingredients: 6-8 Cherrystone clams. 1 box of Stovetop stuffing, 1 link of Linguica sausage, 1 stick of butter, fresh thyme, 4 ribs of celery, 3 cloves of garlic, 1 yellow onion, 1 red bell pepper, handful of Ritz crackers, dry chives, dry parsley. Optional: white wine for steaming clams, extra canned clams, and lemon juice or lemon.

I made this Leg of Lamb on Christmas Eve 2023. Ingredients: ~5 lb leg of lamb on bone. 1 cup of plain Greek yogurt, fresh mint, fresh rosemary, 5 cloves of garlic, 1 red onion, 1 lb of potatoes, 3 large carrots, fresh ginger, 1 tbsp 5 spice, 1 tbsp Garam Masala, 1 tbsp Coriander, 1 tbsp Tumeric, 2 tsp Chili Powder, salt and pepper for taste. Made this Oven Roasted Chicken tonight. Ingredients: ~5-6 lb whole chicken, 1 lemon, fresh thyme, 6 cloves of garlic, 1 yellow onion, 4 medium carrots, 1.5 lbs gold potatoes, 12 oz of chicken stock, dried tarragon, dried rosemary, dries oregano, salt, black pepper, garlic powder, 1 stick of butter, olive oil.       They are already pre-brined. Sure, you could double brine it and add salt if you like. I want to try making my own brine next time. If you have any advice, let me know.

    Corned Beef on this side of the Atlantic is called Bully Beef over there, so it's always confusing to see Salt Beef called Corned Beef

    Gosh darn, I knew there was something I forgot - the seeded rye! I have everything else. Well, all the more reason to freeze the other half of my corned beef ‘til after Lent, then I can get a Browns Cream soda to go along with my Rubin sandwich 🥪 :))

    Looking in. Mine has been on the stove for 2 hours now - it’s a flat cut. I think I may move it from the stove and pop it in the oven for the last hour. The broth is delicious! Almost tastes like a soup . Happy St. Patrick’s 🍻 I diluted the stock, added some AC Vinegar and another onion and stuck it in the oven at 350° for another hour. It was perfect. While it was resting I added first the potatoes and carrots to the stock, then added the cabbage. All told another 20 minutes and they still had some crunch and were ready. Served it up with various mustards and sliced tomatoes. Perfection. Thanks for the Apple Cider Vinegar idea. It brought back some flavor once I had diluted the salty stock.

      Sounds great! That's usually how I make my beef stew....start on the stove and then move it to the oven to finish.

    That corned beef is sliced wrong. It's sliced in the pic ,with the grain ,so the threads of brisket are long and tough It should be sliced against the grain, thus making the threads of brisket scare short and more tender

      Yeah, I messed up cutting it. It was still rather tender because I marinated it for while in apple cider vinegar before cooking it. I mentioned I needed to fix the cut towards the end of video. I was trying to get something up before St. Patrick's day. It still tasted good, but would have been better if cut against the grain as noted. Thanks for watching.

    Looks great, I stock up on corned beef points and flats, used to do my own, and pastrami, bacon.. but no more, when make gir sandwiches I do in pressure cooker with a beer and don't rinse corned beef, it cooks such extreme pressure, let cool, slice whole thing up 🤤, I let it go about 10 min too long in pressure cooker once, it shredded, was awesome, gonna do again, great series 👍

      Ooooh! That’s a perfect combo. Adding pea soup to my menu. I like to put a bit f carrot into it. (peas have been a big thing lately. Some add them to avocado’s and mash them together as a spread for toast.)
