Cauliflower, Peas & Potatoes Curry

1 Small / or 1/2 medium
Cut into small florets
Potatoes
2 large
Cut into chunks
Peas
1 cup
Tomatoes
2 medium
Grated or pureed
Onions
2 small
Finely chopped
Garlic
4 large cloves
Ginger
2 inch piece
Green chillies

Lime / lemon juice
1 tbs.
Fresh coriander / Cilantro

1 handful
Yogurt
3 tbs.
For vegan option:
cashew paste
Made with 6 cashew nuts
Soaked in 1/4 cup water
& grind to a paste

Paprika /Kashmiri chilli powder
1 tsp.
Turmeric
1/2 tsp.
Coriander powder
2 tsp.
Salt
1 1/2 tsp.
