Batch Pasteurization - Non-alcohol Beer
Batch Pasteurization can be an attractive and inexpensive option for handling small product volumes. Non-alcohol and Low-alcohol beers as well as cyders should generally be pasteurized.
This improvised batch pasteurization setup consists of a modified lab sink, dedicated CIP Tank, 2 CIP Pumps with hoses, plexiglass cover for the sink, and a thermometer with an optional data recording device.

Barley Malting - Germination
Переглядів 13714 днів тому
Germination is the second processing step in malting. Barley growth which was initiated during steeping is continued throughout this stage. The grain embryo development can be witnessed by the rootlets growth and increase in length of the acrospire or shoot. The moisture content of the barley is also monitored and carefully controlled during this process. The objective of germination is to achi...
Barley Malting - Steeping
Переглядів 17121 день тому
After cleaning and sizing the barley is ready for malting. The first major malting step is called Steeping. This is the most critical step of the malting process. During steeping barley is soaked in water which initiates the growth process. The steeping process consists of several alternating wet cycles (where grain is submerged under water), and dry cycles (aka air rest periods) where the wate...
Barley Malting Process
Переглядів 66028 днів тому
Malting barley is one of the main ingredients in beer making. The malting process consists of 3 main stages: steeping, germination, and kilning. Malting starts by soaking the barley grains in water, allowing them to germinate, and then drying them with hot air. Maltsters trick barley into thinking that it’s springtime, but when the grain starts to grow, they manipulate the conditions, so that t...
Specialty Malts (Caramel, Crystal, Coffee, Chocolate, Roasted Malts)
Переглядів 155Місяць тому
In this video we will be discussing Caramel and Cristal malts, as well as Roasted Malts families. Unlike base malts, Caramel and Cristal malts do not go through kilning process but are stewed in roasting drums instead. Roasted malts, on the other hand are roasted in drum roasters after they go through the kilning process. Caramel & Cristal malts are used to give beer an increased colour depth, ...
Base Malts (Pilsner, Lager, Pale Ale, Mild, Vienna, & Munich Malts)
Переглядів 346Місяць тому
Malt is one the basic raw materials in brewing. It is where all the extract usually comes from, and it gives beers its body, flavour, and colour. There are many different types of malts, and malt classification can sometimes be a bit confusing. It can be based on the ways the malts were produced, on raw materials, or on final product properties. We will be discussing four malt types: Base malts...

Beer Maturation (Secondary Fermentation, Krausening, Stabilization, Lagering, Aging, Conditioning)
Переглядів 993Місяць тому
After primary fermentation the product is now known as green beer. Even though it is drinkable, the beer is not quite finished and has certain undesirable flavours and lacks carbonation. Beer maturation process is used to allow beer to rest and mature for a period of time in order to develop more desirable flavour characteristics, before it is packaged. Beer Filtration
Переглядів 2,4 тис.2 місяці тому
Beer Filtration involves the process of passing a beer containing solid particles through a medium with small pores to capture and prevent these particles from passing through. Filter Sheets can be used for rough beer filtration, polishing filtration and final filtration for microbiological removal. They are available in various grades for the required level of clarity. Larger particles are ret...
Easy Guide to Mashing
Переглядів 1,1 тис.2 місяці тому
Mashing is one of the most important steps in the brewing process. It has far reaching consequences affecting the rest of the brewing steps as well as some of the most important characteristics of the final beer such as flavour and mouthfeel. Mashing process starts by mixing malt grist with warm water. By controlling temperature and time, different enzymes are activated that break down malt sta...
Beer Fermentation
Переглядів 8442 місяці тому
After the bitter wort is cooled and aerated, it is pumped into a fermentation vessel. As soon as the wort is inoculated with yeast (known as pitching the yeast) the fermentation process can start. Yeast pitching can be done with the yeast slurry recovered from the previous fermentation; in which case the wort must be oxygenated. The yest begins to reproduce and uses up all the oxygen within the...
Malt Milling & Mashing
Переглядів 4932 місяці тому
Malt milling is supposed to achieve both particle size reduction and particle size control. One of the main objectives of the mashing process is to change the chemical structure of some of the constituent substances (primarily the starch and the protein) in a planned and predictable manner. This is achieved by the action of malt enzymes.. Visit our webpage - www.kpu.ca/brew Follow us on Twitter...
Wort Cooling & Transfer to FV
Переглядів 8803 місяці тому
Brewing yeast can only live and metabolize at cool temperatures. Wort needs to be cooled to the temperature for fermentation 15 - 20°C (ales) or 7 - 12°C (lagers). This is done in a wort chiller which is a counter-current plate heat exchanger consisting of a number of thin Stainless-Steel plates arranged one behind another.
