Blackberry Mousse Cups with Chia Pudding | Vegan Recipe
If you, like me, have ripened blackberries, then it's time to cook the most delicate summer dessert! So, Today's Cooking Adventure is Blackberry Mousse Cups with Chia Pudding!
This berry mousse is airy like a cloud. It is a vegan recipe, so it's an egg-free and dairy-free dessert. I whipped aquafaba into the most delicate foam and made a wonderful puree from fresh blackberries.
You can make this vegan dessert very quickly. Only don't forget to make the chia pudding in advance.
Notes:
1. In this case, I used aquafaba from canned white beans. You can also use chickpea aquafaba.
2. You can use any berry and juice of your choice. If the berry is juicy enough, you can exclude juice. Your goal is to get a puree-like consistency. You also can use your favorite fruits.
3. After putting the chia seeds in the coconut milk, stir well. Set the pudding aside for 10-15 minutes. Stir, then cover the pudding with a lid or cling film. Refrigerate for 4-8 hours or overnight.
4. You can decide for yourself how sweet you want to make this dessert. I only added sugar powder in aquafaba. Also, I added some syrup to the chia pudding. But if you have a sweet tooth, you can add sugar to the coconut milk while soaking the chia seeds and also add some syrup to the blackberry puree.

      Try using starch. Rice starch is an option. You can try other types of starch.

      Temperature does affect the thickness of the syrup. In theory, you could end up with hard candy if you bring the syrup to a higher temperature. But, as far as I know, the hard candy recipe has slightly different proportions of ingredients (less water, if I'm right).

      Thanks for the question! You can use any syrup you have on hand. For example, date syrup. The result may differ slightly, but I don’t think it will be significant.

      Thank you for your question! You can try replacing syrup with honey. The amount is approximately the same, depending on honey. I do not recommend replacing sugar completely with honey, as I cannot guarantee the result.

      🤣 Actually, any syrup will do. But I usually make this recipe with this syrup. Results may vary with other syrups. P.S. It's also called 'Topinambur' syrup.

      I haven't tried using ginger juice myself, but I think it would be quite suitable for this recipe. The total volume of liquid should be as indicated in the recipe, but you can adjust the ratio of ginger juice and water to your taste.

      Thanks for your question! Yes, there is such a way. Pour ice water into a glass and drop one drop of hot syrup into the water. Remove a drop of syrup from the glass and squeeze it with your fingers. If the syrup is ready, then the drop will be plastic, like chewing candy. This method is not very convenient, because you have to do all this very quickly so that the syrup does not have time to overheat or burn.

    So buy a baked cake at the store, crumble, add yogurt, and shape it into balls then eat the balls. Why not just eat the bought cake and save all that trouble?

      Of course, you can do that too. But this is a vegan recipe, gluten-free, and prepared with a minimum of unhealthy ingredients. And some people like to cook from scratch. So that they would know exactly what their dessert is made of.

      If you have no way to use syrup, try increasing the amount of sugar and liquid (2 parts sugar to 1 part liquid) to make up for the missing 1/4 cup of syrup. I must warn you that I have not tried this recipe without syrup and my suggestion is purely theoretical. If you decide to try this recipe without syrup, please let me know if it turned out well.🤓

      Yes, this recipe is very messy 🤣. You need to have a lot of patience, especially when all the dishes need to be washed from the syrup. In this case, it is best to boil water in a saucepan and the syrup can be easily washed off.

      Thank you for your question 😉. Yes, marigold have a taste. "Marigolds are eaten as petals or leaves, raw or blanched, fresh or dry, sweet or savory. The trimmed marigold tastes much milder than the flower smells, of a lush tropical garden, herbaceous and pleasantly bitter."

    What if i dont use any syrup? As we are using enough sugar. What is the use of syrup is it for chewyness ? If not used syrup will it make hard candy?

      To make a hard candy, you need to take sugar and liquid in different proportions and increase the heating temperature of the syrup. You can experiment with the recipe without syrup by changing the amount of sugar and adding a little more liquid.
