Beautiful garden. Had to look up fregula. How does it differ from couscous?
Fregula is similar to couscous, the main difference is that it's toasted. It has a different texture than couscous and is a bit chewy. It's well worth trying out if you come across it.
I am surprised by how much equipment and prep space is needed for a relatively small restaurant, not to denigrate the size. I do think it looks like an enjoyable place, especially since you have let us see so much of your fresh and made from scratch fare.
The restaurant has been around for 13 years, so that is a long time to collect equipment. Making everything from scratch takes a lot of labor and it's really hard to find kitchen help these days so machines go a long way toward making things possible. Thanks for watching and commenting!

Traditionally meat was cured outside in unheated buildings or in root cellars. So yes it is possible. However, meat should be cured in a humidity and temperature controlled environment; a cool dark place without any insects or contaminants and free of any wide temperature swings and with good airflow. You may be able to meet all these conditions outside, but usually these variables are better controlled inside. The more controlled the environment the safer and more consistent the meat will turn out.
