For the pasteles, did you make it yourself? If so, can you make a video on that as well?
I did. But I didn’t get enough footage to make an instructional video. It’s tough being the videographer and the subject. There is a short on my channel where I was able to obtain some footage when I was teaching some of the family members how to make pasteles. But there will not be enough information on the how to. Maybe one day when I can afford to pay a team. Pasteles is so labor intensive. Thanks for reaching out.

Thank you for the video, especially the seasoning ratios. Do you have a video on washing the pernil? I've seen some use vinegar, others use water and some don't wash/rinse at all. What are your thoughts? That's again for posting.
Personally, I pat dry with paper towels to get the excess moisture.

Hey. Thanks for the tips. I’m roasting a pernil and was wondering if you leave it uncovered the whole time? Also I’m looking for the pulled pork consistency. Thanks
Yes. Uncovered the whole time. This way the skin can keep getting crispy. Covering it will make the skin soft. For pulled pork consistency cook to an internal temp of 200. Use a meat thermometer. When done, don’t forget to rest it 30 minutes minimum.

At 275? I’ve had a 6 pound pernil in the oven since 1:30 and its internal temperature is 158.
@@rickfig123 at 275 it takes longer. If you are running out of time you can always turn it up.

Sorry. If it is a recipe of something I sell, I will not give it away. But I do have some videos with full recipes as well. I hope you can appreciate the fact that I am sharing techniques, which in my opinion is more valuable than a recipe
Did you use Mexican or Italian oregano?
Italian. But if all you have is Mexican, do it. It’s stronger though so use a bit less

This video is very disappointing. You don’t list the ingredients for the rub but worst of all you don’t show the finished product. Why should I or anyone else subscribe to your channel?
I understand you are disappointed that you didn’t find what you were looking for, but the title of this video was very clear. It was simply a video of how to prepare the pernil. It was not a step-by-step of how to cook it. That is something you will find in another video. I have been told on many occasions that the reason why I have so many subscribers is because of my ability to explain in a way that they understand. There are many comments of how good of a teacher I am. Maybe it’s my broadcast voice or my beautiful eyes. lol. Thanks for stopping by our channel. Hit the reminder on your way out I do plan to put a step-by-step video on exactly how to cook and season pernil in the future.

Is this similar to tamales? I’ve never tried one just curious
Some people calling Puerto Rican tamales because people don’t know what pasteles are. But honestly, they’re nothing like a Tamale tamales are made with corn and wrapped in a corn husk. Pasteles are made with green bananas and wild roots native to Puerto Rico. Different process. And different tastes.
@@ciscos.smokehouse oh I thought they were similar because in Mexico you can have tamales wrapped in a corn husk or a banana leaf also. I’ve also tried tamales from Guatemala wrapped in banana leaves. But the filling is very different and moist. I have never tried pasteles but they also sound delicious and I am assuming the green bananas can give them a hint of sweetness? I think it’s wonderful for Latinos or Hispanics to share each others recipes I will definitely see if someone in my area sells pasteles so I can try them. Thanks for sharing 🙏🏼

Hey Cisco, I’m making one on my smoker today. Do you think 3-4 hours at 350 is okay? Should I cover it in the beginning?
It really depends on the weight and desired end temperature. That is more reliable than time and cooking temp. It will always vary. But at a consistent 350 degrees it’s roughly 25 minutes per pound. But know your skin will come out much darker with smoke. Almost black. It still tastes good, slightly better because it’s smoked. But the hardcore Puerto Ricans who do not understand smoked meats will swear you burned it. Good luck!

They are. But if you like juicy tacos you will definable want flour. Corn tacos can’t hold up to juices
