Kadalai Sri Lankan Chickpea Breakfast (with a little twist)
In Sri Lanka, cereal, toast, and plain old pancakes, are not what one enjoys for breakfast. Kadalai is a common Sri Lankan breakfast and it is easy to make. Enjoy this simple savoury dish! Switch up your breakfast with this favour popping, high protein sensation!
1 Cup Dry Chickpeas
Oil for pan
1/2 Red Onion
1-2 Dry Red chillies
1 TSP Curry Leaves
1/2 TSP Mustard seeds
1/2 TSP Cumin Seeds
2 Garlic Cloves (large)
1 TSP Fresh Ginger
1 TSP Curry Powder
1/4 TSP Turmeric
1/4 TSP Salt (or to taste)
1/4 TSP pepper (or to taste)
Juice of One Lime
Water (amount needed to deglaze)
Dill Garnish
Puttu (optional paring)
1 Cup rice flour
A couple pinches of salt
1/3 Cup Water
Water for pot
6 TBSP Shredded Coconut (divide into three equal parts)
__________
Thoughts/Notes:
A puttu maker of course is ideal to be able to get the perfect result. I wanted to have the flavour combo, so I bravely experimented. Normally puttu comes out in a tube shape when it is done. Some people grind up the rice (not too fine), and then go ahead and prepare their puttu.
In any event, the main recipe is the kadalai. You may find that you like it on its own without anything to go with it. This is not saucy, but use the water for deglazing little by little, You don't want a whole lot of water for this recipe.
You may prefer to shred fresh coconut.
Let me know if you have had kadalai, or plan to make it. It is always interesting to hear people's shares.

    Always made this for festive occasions but don't remember the oregano or garlic. (needless to say that garlic should be used in most recipes)

    • @CookingJJ
      @CookingJJ 9 днів тому

      @janetakesproductions5240 I remember those flavours from my memory. It wasn't Greek oregano, and it was not a great deal - just sprinkled. Also, I'm sure it was garlic powder. Again, enough just for little flavour. (Not bold). One can adjust seasonings to their own personal preference of course. Another alternative idea would be to try black garlic powder to put a subtle spin on the flavours. It's a good base for further inspiration to create other savoury bread pudding recipes.

    So how would it differ from the making of vegan mock goose?

    • @CookingJJ
      @CookingJJ 9 днів тому

      @tktyga77 That is a good question. They are quite similar. Once can use the alternative sauces and preparation methods. An alternative is to have a smoky flavour. (Traditionally with smoked branches). Liquid smoke is a simple alternative to smoking branches. There is one version that is filled with wood ear fungus, bamboo shoots, enoki mushrooms, and carrots. From region to region preparation methods vary. This may be an idea to make the vegan mock goose in a future episode. For a vegan person experimenting, it may be also interesting to ask a non-veg person in order to tweek things and change the mode/style of preparation. Beancurd sheets are used for vegan mock goose as well in Chinese cuisine. However, one may be able to use wheat gluten and make a less tough textured batch. ✌🏻

      One reason I ask is while I'm not veg & await an opportunity to try goose & love duck, I'd like to give veg & non-veg alike a chance to get some without feeling like missing out on them

      Yes. Plant based deliciousness and dish of kindness. Nothing missing here. Shrimp have a central nervous system. They feel pain. They happen to be bottom feeders as well. Commercial fishing has had a massive impact on the environment and other creatures/sentient beings as well. Whether one ops for the pre-made alternatives, or chooses to make their own, it makes a difference.
