This is genuinely REALLY good, and I never see this feature of Blender being talked about. People usually only mention the voxel remesher modifier or the remesher inside the sculpt mode (both are AWFUL) The topology this gave me was nearly perfect, though for some reason it made a duplicate of my mesh on top of itself so I'd recommend trying to use the (M) merge tools right after

That's a really long video for that: 4:14. Un-subdivide works ONLY on proper subdivided geometry. Take your head, add density anywhere on it with dyntopo for example, or just weld two vertices, or try your "solution" on an icosphere: nothing will happen. Un-subdivide reverses the effects of a Subdivision Surface, it's a way to "remove" a Subdivision Modifier even when it was already applied. Period. It's not at all a remeshing solution.

To be honest, I'm not impressed at all with the quality of the mesh topologies produced by Quad Remesher. I have a lot of different 3D scans, and not one of them it failed, the quality is terrible. The big problem is the holes in the model. Tried different parameters, doesn't help. I see other people like you, everything is fine. Hmm... Why it doesn't work for me, maybe it's because I'm special. I don't understand why the developers of this addon are asking for money, if their piece of code is not able to fulfill the task it was designed for!

2:59 well that's your issue right there. Your mesh is symmetrical and you should have symmetry enabled, otherwise you're likely to get weird edge flow and topology issues.
