[Festive Side Dish] Pan-Roasted Rainbow Carrots with Curry Leaf Dukkah | Ottolenghi’s Recipe
Impress your guests with this beautifully presented side dish on Christmas or any special occasions.
I fell in love the first time I saw this recipe by Ottolenghi. It is so pretty and wholesome. Some modifications that I made were, I swapped hazelnuts which I did not have for cashew nuts, pan roasted the carrots and toasted the curry leaves instead of frying them.
In this video, you will learn:
1. How to make aromatic dukkah with curry leaves
2. How to pan roast carrots in shorter time
Use fresh curry leaves to give dukkah a more aromatic flavour.
Make sure to make more dukkah to be used on your toasts, dips or roasted vegetables. Triple the recipe! 😄
Portion: 5-6
Ingredients:
200g rainbow carrots
2-3 garlic cloves
2 tbsp extra virgin olive oil
Dukkah:
1/4C hazelnuts/cashew nuts ( I used cashew nuts)
1/4C pistachio nuts
1/4C almonds ( I used slivered almonds)
1 tbsp coriander seeds
10 g fresh curry leaves
1/4 tsp salt
2 tbsp fried shallots
To serve/garnish:
Greek yoghurt (Use coconut yoghurt/hummus for vegan/dairy free version)
chilli flakes
pinch of salt
fresh lemon juice
ground black pepper

I do it boiled and salted with garlic. 😃
next time try cooking with minimal water to preserve its nutrients especially vitamin C which is water soluble, and adding a bit of oil after to help with the absorption of vitamins. 🙂

OMG I tried this years ago and I loved it. After I had my baby, I was severely nauseous and could barely keep anything down. My Asian friend came to visit me, and she had this steamed egg, along with some other semi-solid foods to eat.. I was able to enjoy it all the way through post partum period. I liked it so much! @@mangachanfan1556 yay lovely! glad you like it 😀. I haven't tried the sweet version but it's likely to work. Use milk instead of water. Warm up the milk. Add 1 tbsp sugar + 1 tsp vanilla extract. Prepare using the same method. I think for chocolate flavour, the easy way is to use chocolate milk instead of water. Let me know if it works! ☺

In Taiwan, we also eat hot pot of different flavors. Such as pumpkin flavor, pig bone flavor, stinky tofu flavor, Chinese medicine flavor, kimchi flavor, pickled bakchoy flavor, wine chicken flavor, shacha flavor, seafood flavor, milk and cheese flavor
So many flavour. I have tried the herbal and mala flavour, those are my favourites.

Wow, so much flavor in just one pot. I've never tried the mushroom before, but I know mushrooms have a great influence on flavors.
Dried shiitake mushrooms are a great addition to soup. They can be used in stir fries once soaked in hot water. They provide umami flavour, enhance the flavour of the dish. Give it a try. 😘
