how can i be the first one here? thank you ladies for an actual explanation of how the variables factor into the stupid, madenning, delicious world of macarons. the mixer info was especially helpful since i hate doing it by hand but i've been too afraid to ruin ingredients with a stand mixer. there are millions of recipe out there, but they don't help you troubleshoot properly. thanks.
I make candies at Christmas and would love to practice these Butter Mints to add this year. Can you tell me exactly how much butter that was and what brand of butter you used. I really hope you see this and reply I love butter mints but never had real homemade mints. Thanks for sharing. Also subscribed to your channel.
We used one stick! One half cup/4oz sized stick.

If I want to pipe the buttercream fondant into molds do I add the flavoring to the pot of “finished” buttercream fondant, and then when it’s cooled enough to safely pour, I will pour it into a piping bag, cut the tip and pipe the filling into the coated mold cavities?
The fondant will not set up properly until after being worked with the bench knife, so unfortunately it will not set up correctly if you use it in its liquid form.

The background music is so annoying. Sometimes it makes it difficult to hear what you are saying. Also, if you're going to give people a recipe to make you need to be able to give them the quantities for each ingredient.

My great great grandmother made candies, my aunt made candies and both passed away just before I was born in 1984, this is the way she did it, but we’re missing her recipe. I have her stone. Gonna try it this year.
My suggestion is to record temp, humidity and barometric pressure every time you make candies..the more data points you have (every hour) the better you be at understanding how it works

What if I don't have any seed chocolate? Seed chocolate is already tempered chocolate? I am making bean to bar chocolate so no tempered chocolate at all.
I will clarify my question. If I am tempering chocolate that is just out of the melanger or has set a few days, and I don't have any seed, do I still melt only 2/3 at a time then add the remaining chocolate?

Tried 4 batches, none of them worked, bowl is clean, pure egg white, I can easily get fluffy egg white from kitchen aid mixer, cannot get this worked with ank😢

Good demo. I liked the flexible bowls. I was interested in what degree of stiffness of the dough uwould be OK sing the wire beaters. You might want to check out the dangers of eating raw flour.

So long as your bowl is clean, plastic works just fine!

Fudge.....this is fudge. Some people call it creamy fondant or candy fondant.....but it's FUDGE.

Maybe they called them butter mints because they melt in your mouth like butter. They do feel creamy.
I use the flexible silicone bowls all the time in all of the available sizes. Love them!

I have had my Bosch for over 30 years and made gallons of American buttercream in it. Mine is an old style. It doesn't need help, you are not doing it right. Use the cookie paddles with the bowl scraper attached. Use closer to room temperature butter. I make a double recipe (that includes 4 pounds of powdered sugar). Put all of your butter in at once. PUT ON the lid and mix. I then put 2 pounds of sugar in at once and PUT ON BOTH LIDS! Mix. Add the second 2 pounds and mix. Take off the center lid, leave on the splash lid, add your teaspoon or 2 of milk or cream, and vanilla, salt while it is mixing. Use low speed the whole time. Mix until it is white and fluffy. The lids allow you to add the powdered sugar without making a mess.
Oo that would seem like a tasty treat, especially since it’s white chocolate. I feel like white chocolate would go more with the treat you’re making rather than milk or dark chocolate. Very nice video! ❤
