GASTROMASA 2022 Presentation // Hardeep Rehal: Rescuing Flavour - Waste In Disguise.
𝗙𝗶𝗿𝘀𝘁 𝗼𝗳 𝗮𝗹𝗹 𝗔𝗽𝗼𝗹𝗼𝗴𝗶𝗲𝘀
Sorry for the missing first minute, due to techical difficulties. It's basically just me introducing myself.
Also sorry for the skewed powerpoint. The screen aspect ratio on stage didn't fit the 16:9 ratio of my presentation, but you'll get the idea...
𝗚𝗮𝘀𝘁𝗿𝗼𝗺𝗮𝘀𝗮 𝟮𝟬𝟮𝟮
The VII. International @Gastromasa Gastronomy Conference in Istanbul, one of the world most important and biggest gastronomy conferences in the world. Gathering top names that shape the industry to exchange ideas within the framework of the theme of “Sustainability & Biodiversity".
𝗥𝗲𝘀𝗰𝘂𝗶𝗻𝗴 𝗙𝗹𝗮𝘃𝗼𝘂𝗿 - 𝗪𝗮𝘀𝘁𝗲 𝗜𝗻 𝗗𝗶𝘀𝗴𝘂𝗶𝘀𝗲
My talk is about sustainable innovation in bartending.
I'm diving into redefining already known techniques and by seeing everything as potential flavour and thinking outside the box, we can save waste and create drinks such as:
• Reusing Eggshells to create minerality in drinks.
• Reusing stale rye bread to create a coffee like beverage.

So stylish. I like this taste. Please upload more videos.
Very instructive thank you
Soooo good!
Still got the muddy brown color though
Good tanqueray ten👍
Very nice presentation. Thank you
How do you measure accurately in your jigger? For example, you mention "1.4 oz" but there is no mark-line for that. How do you know you are being accurate in measurements since the stated amounts are so precise? Thanks, entertaining video!
Use ml instead of Oz. It'll make a lot more sense.
Boodles is the best gin.
pretty good! tried this on the bar at work, dropped the syrup to .75 an ounce and it was perfect for a collins glass. no need to double strain
Twice as much sugar syrup as lime juice? I doubt that that would make for a balanced cocktail, even if the fresh pineapple juice and tomatoes are slightly sour. I would also double strain the drink since having to chew on tomato skin and seeds is not particularly pleasant in my opinion. The flavor combination does sound pretty good though.
Simple syrup should not equal gin. Especially if you are adding even more natural sugars from pineapple juice.
"Were gonna make a gimlet" Doesnt make a gimlet.
I would recommend making more videos like this and recipe videos like you one you did in Copenhangen. I really like this style and I will subscribe in the hopes you keep doing more like this.
I really like this, and learned a new drink. You do this so well! I subscribed, even though I realize you haven't posted much lately. Your production quality is top-notch, and you have perfect "host presence" for these videos. How do I know? Because I've been a coach and producer for decades, and I know Good Quality when I see it. So the lack of views and subscribers seems ridiculous. People are making far worse videos with far more views. I wish you nothing but success.
you shaking the mixture made me laugh my brotha. thanks for the vid!
Sorry but you switched your pre-squeezed lime and pineapple juice. I watched it twice to be sure. Lime juice is never bright yellow, but pineapple juice is. Nice try.
Thank you for you sharp observation. The video has been colour-corrected so the contrast is higher, that is why you might be fooled by the hue difference. The pineapple juice is way darker in colour as it is more saturated and dense leading to a more orange hue, lime juice would never get that hue, it remains brighter and is indeed yellow. No switch happened here. ;)
Meraviglioso 🤩🤤👌🏼👏🏽👏🏽👏🏽
