Fr. Frank's Pork Medallions with Florentine Pasta Pork Tenderloin · Chicken, Turkey or Beef Pasta of your choice, save about 1 cup of starchy pasta water Salt and Pepper to taste Olive oil Cherry Tomatoes Garlic, fresh minced Fresh Spinach, washed and dried Parmesan Cheese, grated Basil, fresh chopped 1 - Slice pork tenderloin into 1/2 inch pieces. Pound to 1/8 inch and sprinkle with salt and pepper. Lay to the side. 2 - In a pot, place 1 gallon of salted water and bring it to a boil. Place pasta in water and cook until al dente. 3 - In a large saucepan heat 2 TBSP of olive oil and fry the pork tenderloin on each side for about two minutes per side. Add tomatoes and garlic and sauté until fragrant. Remove everything to a heated plate and set aside. 4 - Place the spinach in the pan and sauté until it is wilted. Take about 1/2 cup of pasta water and add to the saucepan. 5 - Place the al dente pasta into the saucepan and add half the grated parmesan cheese. Continue stirring creating a sauce with the pasta and cheese. Add more pasta water if too dry. Add the pork medallions, tomatoes, garlic and fresh basil. Stir together and plate. Top with remaining cheese.

Can't believe these are in a religious order! I've heard them use God's name 4 times and it's still got 1/4 to go yet!!!
