I am making organic kamairicha in Kurokimachi, Fukuoka (I live near Reiganji temple in Kasahara) and wish to perfect the processes and technique. Thank you for the video! A few days ago I found an 80cm size big Kama pan and will recondition it to make larger batches of tea. I love to make tea by hand!!. The taste is so unique.

Is there a maximum time or interval to wait before which the leaves cannot be infused again ?
Thank you for your inquiry. I'm sorry, my English is not good enough to understand your question. Could you rephrase your question? If you ask how many times do we recommend brewing with the same leaves, we recommend 3 times. As you brew more cups, you will taste more catechins that taste bitter and astringent. If you ask about the interval time between 1st and 2nd infusion, for example, no time set but recommend brewing your next cup before your tea leaves turn yellowish.

Because of the brewing methods, wouldn't it be good to brew the tea a minute with 80 degrees Celsius for the maximum amount of caffein and then later on a second time with 70 or 60 degree celsius for a much longer time to extract all the Catechines and have all the health benefits? I also was told that Caffein and another component in green tea bind to each other, which makes the Caffein less effective, is this true?
Thank you for your feedback! If you want to consume all catechins, the best way is to drink powdered green teas. For brewing temperature and time, if you focus on catechins only, higher water temperature and longer infusion time help catechins infused into your tea liquid on both 1st & 2nd infusion. However, in general, lower water temperature/longer infusion time for your 1st cup, higher water temperature/shorter infusion time for 2/3 cups are recommended to enjoy the balance of the taste of amino acids, caffeine, and catechins. Yes, each component work by blocking the other. theanine and arginine(amino-acids) vs. caffeine and EGCG(catechin).

What temperature should the water be?
What tea do you brew? For the standard water temperature, check this link: sono-organic.com/how-to-brew-japanese-teas/ You can also set your preferred water temperature. Bitter caffeine is easily infused when you use higher water temperature. While sweet umami taste amino-acids is infused regardless of water temperature:. how would you dispose of the leaf when you are completely done brewing with it?
Rinse with water. Rinse from spout and body. And if you can't get rid of small leaves or stems, use toothbrush.

For 2nd cup, I recommend higher water temperature and half brewing time than 1st cup. And for 3rd cup, higher water temperature and half brewing time than 2nd cup. The more cup you brew, less adjust water temperature and shorter brewing time.
