If you wrap the bottom of the pan in foil to make it water tight, then place it in a larger pan with cold water and some ice cubes, you get not only the benefit of the water bath, but the cold water keeps the outer edge of the cheesecake from cooking faster than the center, resulting in that creamy texture edge to edge. (I dislike how dry the outside edge of must cheesecakes gets)

Crust: 12 graham cracker sleeves crushed, 2 tbsp sugar, 1/4 c. melted butter. Smooth into a 9" spring form pan. Bake at 350° for 15 minutes and remove. Filling: Three, 8 oz cream cheese blocks softened, then whipped. 1 c. sugar, 2 tsp vanilla extract, 3 eggs (one at a time), 1/2 c. sour cream. Whip all ingredients for several minutes until smooth. Bake at 350° for 50 minutes. The center should wobble slightly before removing it. Chill for at least 6 hours and enjoy!
