Honestly i doubt they did nothing to make that water last longer- you did the biggest mistake by not preventing air from getting inside your barrel- you should seal every hole with bees wax, as i am sure people did back then ;)

It was a common practice to fire the white oak barrels. This placing them for a short time over a fire to char the inside surfaces. The obvious benefits are that charcoal will help kill bacteria but also coat the inside of the barrel with a neutral material and leach out some of the negative things. Hence the same thing is done for barrels used in whiskey distillation.

I read that water was carried in charred oaken kasks. The carbon would keep the water fresh. It worked quite well apparently.
I'm surprised they didn't resupply fresh water along their way.
