I was up on oak wood but did a brisket 2 weeks ago and noticed that I wasn't tasting no smoke 😢😢so now I'm back on the hunt for some mesquite wood and kinda felt like I turned my back on mesquite wood, do you let your mesquite burn down to coals and then put the brisket on when your smoker comes up to temperature? And then do you start adding mesquite to maintain your temperature as the cook goes on? Please comment back and let me know 👍🏽
No wrap on a mesquite brisket. Please people don’t do this. Trust me the flavor is way too intense. I use mesquite on most my bbq but it’s not for long cooks
Wrapped brisket is the only way you didn't let it rest and look at that lil juice soon as it rests it will be dry and tuffer when I cut a wrapped brisket after sitting It dumps 10× the amount of juice compared to that brisket and the meat literally falls apart I'm not saying it might not be good but it's not smack ur momma good or taint tickling tender lmao
