I am having trouble with the boolean cutsz the shading is off after applying. Is there any say to counter this?
shading? I don't understand. Maybe it's a problem with the face normals. You can fix it with weigthed normals or use the new retolopoly after use bollean modifier.

Hi! yes. Just remove lines that are not essential to the model. Take a similar low poly model to visualize how a low poly mesh works. It will help you reduce the mesh of that model.

The way you modelled the bottle is great. One thing I would change. To do the label I would just select the squares which are already there, and then detach. Then I would remove all the edges that make up the squares leaving the horizontal edges. Then I would just weld it back to the model.
