I guess you could make stage-glass, fake glass made from sugar, if you wanted it to be safer for cleaning up, but it will never be as clear as real glass and will not make the trademark glass breaking sound that real glass does.
I think I vaguely know how it was done, but I'm usually wrong. I think a key moment is not shown in the video, but of course Penn & Teller aren't told to close their eyes. (to preserve mystery, don't comment on that) I guess a more legit way to show the magic, would be to have a camera between Penn & Teller, but then there would be no close-ups or good angles for showing off the performance.

Thank you for your comment. In the Magic Castle this illusion is performed exactly like this. The camera cuts don't reveal anything!

It's so they can film in a different sequence than they show the tricks on TV. Penn and Teller also wear the same clothes every episode.
